The Maritime Catering Trainer plays a key role in improving crew welfare, operational efficiency, and regulatory compliance across vessels.

Job Description

  • Deliver classroom-based and hands-on practical training in culinary arts, baking, food safety, and sanitation
  • Design, review, and update training curricula aligned with maritime catering standards
  • Assess trainees through written exams, practical demonstrations, and simulated onboard scenarios
  • Develop cost-effective, nutritionally balanced menus that respect cultural diversity
  • Train galley crew on waste management, proper storage, and safe food-handling practices
  • Ensure all training aligns with Maritime Labour Convention (MLC) 2006 requirements
  • Promote best practices that reduce food waste and improve operational efficiency

The Successful Applicant

  • Former Head Cook or Chief Cook with at least 2-3 contracts in a senior galley role
  • Background in maritime catering is strongly preferred
  • Holder of National Certificate II or III (Ship's Cook) or equivalent
  • Valid STCW certifications relevant to the role
  • IMO Model Course - Instructor and Assessor certification
  • Graduate of BS Hotel & Restaurant Management or related culinary program
